Agroittica Lombarda SpA: sturgeon & caviar

The white sturgeon is a fish with very white flesh suited to modern dietary requirements because it contains over 17& protein, omega 3 and a modest percentage of fats (less than 5%).
By means of careful genetic selection Agroittica are the only ones in Europe who have managed to develop the right technique for reproducing their sturgeons. In the ultra-modern processing plant  of 4000 square metres, the fish are processed, filleted, divided into portions or slices and naturally smoked. They are then packaged and shipped. Their wholesomeness, freshness and hygiene are guaranteed.
In the 90s the company began to extract and sell a high quality caviar from their own sturgeon, prepared using avant-garde systems for health and hygiene conditions, but still using an entirely manual and skilled processing technique to preserve the sensory characteristics, wholesomeness and freshness of  "Calvisano Caviar", which soon  became one of the exquisite delicacies of world gastronomy.
Much of the merit for the quality of our caviar is due to the unique characteristics of the waters of Calvisano and to our model of sustainable aquaculture. Thanks to these a  farmed caviar of great value has been created, even when compared to the most famous wild caviar. The tiny black pearls are available form October to March and Agroittica Lombarda can extract the roe at the right moment, when they are at their very  best, in an environment where the waters are very pure, the feed is controlled and the conditions are perfectly hygienic.

Since 1998, the sturgeon has been included in  the Washington Convention's  list of endangered species. The sturgeon risks extinction due to excessive poaching and pollution and their survival is endangered in countries such as Russia, Iran and China.
Thus Agroittica Lombarda with their innovative technique of aquaculture which makes it possible for sturgeon to be born in captivity not only contribute to the protection of  the sturgeon, but also have an advantage in terms of competition.
