Each product is hand salted and cold smoked in our ovens using mixes of precious woods according to recipes which are the heritage of Agroittica's decades of experience.

The prized Royal Salmon, or Red King, is line-fished in the uncontaminated waters between Alaska and Canada. It is a wild fish which still today leaves the Pacific Ocean where it lives, north of California as far as the Bering Sea and the Arctic Ocean, and swims against the currents of the rivers to return and lay its eggs in the fresh water where it was born.
Only the very best Norwegian salmon becomes Elite. It is processed by hand and then naturally smoked using precious woods, resulting in an unmistakeable and delicate flavour. This creates a unique product, according to a recipe handed down over generations, which is supremely interpreted by Agroittica.
