Technology and ecology for the perfect caviar.
Halfway through the 90s, Agroittica began to formulate a strict marketing strategy to improve their production of excellent caviar which, today reaches the quantity of 24 tonnes per year, making Agroittica Lombarda the leading world producer.
Thus the trademark Calvisius® was created for large sized roe (2.8-3.2 mm) of Malossol Caviar, which means "with little salt". The trademark is inspired by the legend from Roman times according to which a noble cavalryman - Calvisius - with refined taste moved to Calvisano to breed sturgeon so that he would always have the freshest caviar available for his guests during his magnificent and opulent banquets.
Over recent years the parallel development with Agroittica's research into the native species of sturgeon and into the tastes of consumers around the world has led the company to regenerate the Venetian Sturgeon (a cross between Acipenser Naccari and Acipenser Baeri); Agroittica today extracts a caviar from this small deliciously flavoured sturgeon. The caviar is characterised by small-sized roe which are extraordinarily full of flavour and consistent: the Caviar de Venise®. All Agroittica's caviars reach the highest international standards in terms of colour, size, consistency and freshness of the roe; for this reason Calvisius® and Caviar de Venise® are served daily in elite restaurants all over the world.
