The highly automated departments, the logistics and the highly specialized staff make it possible to process both fresh and smoked products from fish caught or bred in various parts of the world (Norwegian and Scottish salmon, trout, tuna, swordfish) with the strictest respect for health and hygiene standards.
The processing and smoking system, although carried out using sophisticated equipment, is based on traditional methods of trimming and dry salting, while the smoking cycle makes use of precious woods according to ancient recipes.
